The Heart Behind the Flavor
Hi, I’m Zayden, an aspiring chef, flavor enthusiast, and the proud creator of this cookbook and the shelf-stable version of Gama’s Epis. This project is more than just food for me; it’s a tribute, a legacy, and the start of something deeply personal.
I created this cookbook and seasoning in honor of my amazing grandmother, Gama Misera, whose love was poured into every pot she ever stirred. Her epis, an all-purpose Haitian green seasoning, was the heart of her kitchen. With every pinch and spoonful, she passed down more than flavor; she passed down identity, tradition, and love.
As I step into the culinary world, I want to preserve her legacy in a way that could reach others. I spent countless hours dehydrating, hand-blending, and curating this version of her recipe to be shelf-stable so that anyone, anywhere, could taste the magic of her kitchen.
This cookbook is my way of sharing her story through food. Every recipe is crafted to be simple, flavorful, and soulful, infused with the spirit of my Gama. Whether you’re new to the kitchen or a seasoned cook, I hope these dishes inspire you to gather, cook with intention, and pass down your own traditions.
